Loaded Veggie Chickpea Wrap
The vegan chickpea

 Makes one

1/4 c chickpeas
1/4 c carrots, finely diced
1/4 c avocado, finely diced
1/4 c tomatoes, finely diced
1/4 c romaine lettuce, thinly sliced
4 pickle slices, diced (I use bread and butter)
1 heaping tbsp vegan mayo
1 gluten-free wrap (I use Food for Life)

Add chickpeas to a bowl. Mash with fork. Add all vegetables and mix. Add mayo and gently mix until everything is coated. Microwave wrap for 30 seconds (if necessary), top with vegetable mixture. Fold into desired shape.
