Dear Patricia:
You're absolutely correct that God is primarily seeking our faith first.
You are also correct in your assumption that eating an animal's body parts and by-products is not a sin in itself, because it is part of the concession.
But we also believe that God wants us to mature to a higher level, as we are told in Matthew 5:48 "You shall be perfect as your Father in heaven is perfect." Also think about what we are told in the Lord's prayer: "Thy kingdom come. Thy will be done on earth as it is in heaven." Since there is no death in heaven, and we believe what we pray for, shouldn't we do whatever we can to eliminate as much death as we can here on earth?
The one who is cruel to animals will indeed have to answer to God. However once a person become aware of such cruelty and continues to support it with their money, they become a party to the cruelty, and thus become a sinner along with the one actually abusing the animals.
