Citation: At approximately 1315 hrs I observed the following non-compliance. I manually took the temperature of pork ribs that were about to be packaged. I observed the temperature was 50 degrees Fahrenheit. The plants HACCP plan states that [redacted]. I informed a plant employee () that the product was outside of the plants critical limits and he immediately put the product into the cooler to bring the temperature back into compliance. took the proper corrective action of re-chilling the product to an acceptable level. The Plant has failed to keep the product at an adequate temperature to prevent the growth of pathogens and to stay within compliance of the critical limits during the packaging step of their process. This document serves as notice of non-compliance within Federal Regulation 9 CFR 417.2(c)(4).
