Citation: At approximately 1500 hrs while performing routine inspection I observed the following non-compliance. In the slaughter floor I observed condensation falling from the ceiling. I placed U.S. Reject tag NO. B39879074 in the area to stop slaughter until the area could be brought back into compliance. I informed of the non-compliance and she proceeded to have a slaughter floor employee wipe down and remove the condensation. After the condensation was removed/ wiped down, the U.S. Reject tag was removed and slaughter resumed Federal Regulation 9 CFR 416.2(d) states that there needs to be, "ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and creation of insanitary conditions must be provided." This document serves as notice of non-compliance within Federal Regulation 9 CFR 416.2(d).
