Citation: While performing pre-operational Inspection I observed the following non-compliance. On the slaughter floor I observed several chunks of swine hair and other debris on the de-hairer (non-contact). I also observed a chunk of fat that was stuck next to the teeth of the strider (contact) and a cart that had fat build up on it (non-contact). There were also pieces of fat on the 2 hand saws (contact). I applied U.S. Reject tag B39878922 to the equipment. I informed the slaughter floor employees who immediately re-cleaned all of the items. I then re-checked the equipment and released it back to the establishment. This document serves as notice of non-compliance within Federal Regulation 9 CFR 416.13(c), 416.4(a) and 416.4(b).
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
