Citation: At approximately 1310 hrs I observed the following non-compliance.[newline]In the processing room I observed the establishment processing several goats. I asked if these were the goats from that were slaughtered this morning. He informed me that there was one goat that was slaughtered this morning. I then took the temperature on 2 separate pieces of meat. The first piece was 36 degrees Fahrenheit. The second piece was 55 degrees Fahrenheit. According to the establishments HACCP plan [redacted]. By the time all of this had occurred, the establishment employees were already in the process of taking trays of the partially processed goats into the freezer, no regulatory control action was taken.
