Citation: On this date at approximately 0800 hours while performing an unscheduled 01C02 procedure, the following non-compliance was observed: The Temperature Monitoring Log indicated that the temperatures for 11/17/2010 were recorded a single time in the a.m., with no entry in the afternoon. The establishment's plan states that [redacted]. The establishment was operational and did process more than four hours 11/17/2010, therefore, it was required that temperatures be taken a second time. Each official establishment shall conduct all procedures in the Sanitation SOP's at the frequency specified. I notified Mr. verbally and with this written notice. This document serves as written notification that failure to comply with regulatory requirements could result in additional regulatory or administrative action.
