Citation: On this date at approximately 1300 hours, while performing an unscheduled 03C02 procedure the following non-compliance was observed: A veal calf had been slaughtered and processed at the establishment 02/28/2011 and 03/03/2011, respectively. The product was shipped 03/08/2011. The slaughter log indicated the pre-shipment review had been performed 03/03/2011, however, there was no documentation of a pre-shipment review having been completed after the carcass was processed. Prior to shipping product, the establishment shall review the records associated with the production of that product to ensure completeness and documentation of the monitoring of CCP's and their critical limits. I notified Mr. verbally and with this written notice. This document serves as written notification that failure to comply with regulatory requirements could result in additional regulatory or administrative action.
417.5(c) Prior to shipping product, the establishment shall review the records associated with the production of that product, documented in accordance with this section, to ensure completeness, including the determination that all critical limits were met and, if appropriate, corrective actions were taken, including the proper disposition of product. Where practicable, this review shall be conducted, dated, and signed by an individual who did not produce the record(s), preferably by someone trained in accordance with §417.7 of this part, or the responsible establishment official.
