Citation: On 5/4/2011, at approximately 0900 hours, while performing an unscheduled 01B02 procedure, the following non-compliance was observed in the processing room: 5 pieces of fat/meat reside, less than 1/8th of an inch in diameter, adhered to the back of the left, removable blade guide, used in the bandsaw. Establishment pre-operational sanitation records do not indicate this deficiency. I applied U.S. Reject Tag #B3773926. I notified Mr. who took immediate corrective action by cleaning and sanitizing the blade guide. I removed the U.S. Reject Tag after conditions were back into compliance. This document serves as a written notice that our failure to comply with regulatory requirements could result in additional regulatory or administrative action.
416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
