Violation: 416.13(c), 416.4(d)

Citation: At approximately 1720 hrs, on Wednesday, October 6, 2010, while performing the ISP code 01C02 in room 1700 (Fresh Pork boning) I observed the following noncompliance. On the white belt of the Rib packing station, I observed a Liquid dripping from the seam in the overhead cement ceiling dripping directly on the white Belt (Product contact) that transported ribs to the packing line, there were ribs on the belt at the time of my observation. I immediately took regulatory control and asked Plant Management to stop production of the Rib packing line. I rejected the line with USDA reject Tag # B34720340 and took regulatory control of the ribs that were transported to the packing station at the time of my observation. I turned the product that was retained by me over to the Plant Technical Services Dept. who then retained the 2997 lbs of Ribs with their tags. I informed Mr. Production Supervisor of the above noncompliance and my actions. The Establishment was notified of their failure to meet the requirements of 416.13(c) and 416.4(d) of the Meat and poultry regulations as well as the requirements of section 3.2: All other Food Processing Operations, under operational Sanitation section of the Est. written SSOP program dated and last revised 09/03/2010. No documentation was noted on the SSOP operational sanitation monitoring form prior to my observations. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action as outlined in 9 CFR 500.4.


416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
