Citation: At approximately 0144 on the morning of 11/15/10, while conducting an 01C02 procedure in room 2250 (Elevator Room Cooler), I observed the following noncompliance. In room 2250, I observed clear liquid drip down a metal bar in the ceiling and onto a rack of fully cooked product labeled "Boot Jack". A drip pan had been affixed around the bar near the top. The caulk that sealed the drip pan to the bar was broken. There was a bright green substance at the top of the bar near where it met the plastic drip pan. The bottom of the bar and attached fixtures showed significant rust. I immediately retained the affected rack of product (approximately 48 pieces) with US Retained tag B24763201 and took verbal regulatory control of the area. I, also, immediately informed Supervisor of Packing Area, of this noncompliance and of my regulatory control actions. The affected product was moved from the area and tagged by QA for further evaluation. The affected area was tagged by plant personnel pending repair of the overhead structures. This is a violation of 9CFR416.13(c) and 416.4(d). This is also a violation of the plant's own SSOP plan, sec 3.2 (signed 9/3/10). This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
