Citation: On this date 06/01/2012 at approximately 06:35 hours while performing heat-treated shelf stable procedure, the following non-compliance was observed. In the room 1740 lard rendering, the cooking temperature was 126” F. (according to the digital readout). This is a HACCP deviation. The critical limit [redacted] Product was affected. Upon a review of the HACCP 06-CCP-28 record showed an establishment representative performed his latest check at 06:28 hours the temperature recorded was [redacted].[newline]The area superivsor Mr. was notified immediately. He halted production and drained the cooked product line immediately, preventing contamination of properly cooked product. Mr. was notified verbally and in writing of this non-compliance and failure to comply with 9 CFR 417.2(c)(4).[newline]This document serves as a written notification that failure to comply with regulatory requirements could result in additional regulatory or admininstrative action according to the Rule of Practice of 9 CFR part 500.
