Citation: Today 06/01/12 at approximately 0615  hours while performing pre-operational sanitation inspection prior to the start of operations, I observed the following non-compliances in Room 1280 (Casing Pulling Room):  In Units 01& 02 the casing conveyors and rollers inside the stainless steel trough had a heavy build up of fat on them. In addition inside the troughs also had numerous fat and meat scraps around the drain areas. In Units 5&6, all areas associated with the casing stripping and casing finishing machines had heavy fat as well as fat and meat specs in them.                                       [newline]All parts related to the casing pulling process would be considered product contact surfaces. I took a regulatory control action and applied  tag #B 24762691 to the area affected. All areas were recleaned and sanitized under my supervision. After reviewing Est. 791 ‘s Pre-Operational Sanitation Records I found no documentation denoting the above deficiencies.[newline]Lead person and FSQA Supervisor   were verbally notified of these noncompliances and the failure to meet regulatory requirements 9CFR 416.1, 416.2(a), 416.4(a), 416.4(b), 416.13(a) as well as Est. 791’s SSOP dated 01/13/12 which states on Page 3 [redacted]


416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP’s before the start of operations.
