Citation: At approximately 1420 hrs, while performing of an (operational sanitation check) 01C02 in the cook room cooler # 5, I observed what appeared to be a white mold like substance on the ceiling in two general areas of the cooler. The substance was powdery in texture and crumbled when touched. The substance was located at the left end of the cooler on the ceiling approximately 2 'x 6' area in small clusters. The substance was also found at the far right end of the cooler on the ceiling between the large circulation fans. The area affected was approximately 2'x3' also in small clusters. There was one tree of 979s or smoked turkey breasts located in this location. QA tech Ms tagged the product. I rejected both the far left end and the far right end of the cooler # 5 applying reject tag # B37853351 to the right side and reject tag # B37853356 to the left side of the cooler. I notified Mr. ng of the noncompliance. This is a violation of 9 CFR 416.4 (b) and 416.4 (d) as well as the plant's own SSOP plan. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative actions
416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
