Citation: At approximately 0714 hours, I performed a zero tolerance fecal check on the Meyn line past the spray cabinet and prior to the chicken carcass entering the chicken soaker. Performance of this check is part of procedure 03J01. I randomly selected ten birds from the evisceration line and inspected them for visible fecal contamination. I observed fecal on one of the ten birds. The fecal was located on the tail area of the carcass. It was dark brown in color and was approximately 3/4" in diameter. It was paste-like consistency. Since there were no employees between me and the chicken soaker when I performed this check, it is reasonable to assume the contaminated bird would have entered the chicken soaker in violation of regulation 381.65(e). I immediately notified Mr. (First Processing Superintendent), and Mr. (Chicken Evisceration Supervisor) of the noncompliance. This is the direct violation of 9 CFR 417.4(a)(2)(ii), 381.65 (e), as well as the plant's own HACCP plan, Chicken Slaughter CCP # 1. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.
381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.
