Citation: At approximately 0648 hours, I performed Poultry Finished Product Standards on the chicken "Meyn" line. I randomly selected ten carcasses from the line, which failed for trim nonconformance. Out of the ten birds, I observed two birds with trimmable lesion/condition and failure to complete task as indicated by marking system. The total nonconformance score exceeded the subgroup absolute limit of seventeen. The score was twenty. I immediately notified Ms. (Quality Assurance Technician) of the prechill failure. Then I informed Mr. (Chicken Evisceration Supervisor) and Mr. (First Processing Superintendent) of the failure. Ms. performed the retest at the prechill station, which also failed with one bird with trimmable lesion/condition and failure to complete task as indicated by marking system. This is the direct violation of 9 CFR 381.76 and 381.86.
381.76(b) Presentation: Each inspector shall be flanked by an establishment employee assigned to be the inspector’s helper. The one inspector on the SIS–1 line shall be presented every bird. Each inspector on the SIS–2 line shall be presented every other bird on the line. An establishment employee shall present each bird to the inspector properly eviscerated with the back side toward the inspector and the viscera uniformly trailing or leading. Each inspector shall inspect the inside, viscera, and outside of all birds presented.
381.86 Any organ or other part of a carcass which is affected by an inflammatory process shall be condemned and, if there is evidence of general systemic disturbance, the whole carcass shall be condemned.
