Citation: At approximately 0615, while doing a walk through of the raw side of the cook room, I observed the following SPS Verification noncompliance: [newline] At the fry line area, I observed insects (two) crawling on the bags of breading and batter, which is utilized when producing chicken nuggets.. On futher investigation a few dead insects were also observed. I immediately informed (Supervisor) who then called (Cook Room Superintendent). As a group we checked the breading and batter media, we seen no insect activity. At this time I suggested that we go to the upstairs storage area and check the skids of breading and batter. We observed insect activity both alive and dead ; which were too numerous to count. On review of pest treatment, it shows that pest control was in plant on 09/11/11. This is a violation of 9CFR 416.2(a), 416.4(d), and your SPS Program. [newline] Immediate appropriate corrective actions ensuring compliance with FSIS regulations were set forth by the plant.
416.2(a) Grounds and pest control. The grounds about an establishment must be maintained to prevent conditions that could lead to insanitary conditions, adulteration of product, or interfere with inspection by FSIS program employees. Establishments must have in place a pest management program to prevent the harborage and breeding of pests on the grounds and within establishment facilities. Pest control substances used must be safe and effective under the conditions of use and not be applied or stored in a manner that will result in the adulteration of product or the creation of insanitary conditions.
416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
