Citation: 416.1 At approximately 12:43pm, while doing a walk through of the facility, I observed condensation above the chicken chiller. There were several beaded droplets of condensation on the pipes that are above the chiller. Most of the droplets were localized to the white coated pipes and were near the chicken salter end of the chiller. Although, there was one droplet on a white coated pipe near the second processing end. While some of the droplets were large, I did not witness any drops falling into the chiller water. Salt Room Supervisor, was notified of the condensation. No enforcement action was taken as Mr. took immediate corrective action and began mopping the areas of condensation. After reviewing the Sanitation SOP #2 “[redacted]”, the plant was found to be in compliance with this Sanitation SOP. The Operational Sanitation Check sheet had checks for condensation occurring every two hours, with the previous check being recorded at 11:01am. After I informed Mr. of the condensation and the condensation was taken care of, the establishment recorded a check at 12:47pm. After reviewing the Processing In-Plant Peripheral Monitoring of 1st processing sheet, I observed that condensation was last checked before production, at 3:58am. According to the establishment’s SPS #4, monitoring areas for condensation during operations will occur continually. Therefore, the establishment is in non-compliance with both their SPS #4 and 9 CFR 416.1 “establishment must be operated and maintained in a manner to prevent the creation of an insanitary condition.”
416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.
