Citation: While performing a Slaughter HACCP task today, the following HACCP non-compliance was observed: A review of the chicken slaughter HACCP plan revealed that CCP [redacted]ing, does not identify what processing aid(s) (chlorine, hot water, organic acids, etc) are used to return the contaminated carcasses to an acceptable sanitary state. The Hazard Analysis specifies under the measures to prevent, eliminate, or reduce the hazard to an acceptable level, the measure will be to: “[redacted].” After speaking with QA, it was determined that the establishment uses chlorine at [redacted] ppm in the water supplied to the reprocessing station and does have records documenting the monitoring of those levels; however, these results along with other required parts of a CCP are not supplied as CCP documentation. Also, during my observations during production, the racks at the reprocessing station were all full, the number of carcasses required to be identified for off-line reprocessing by the on-line inspectors was higher that normal, and the fact that the establishments’ QA had identified an on-line zero fecal tolerance failure at the pre-chill station, I notified 1st processing superintendent, to reduce the line speed by 10 birds per minute at 6:25 am until adequate process control could be achieved. The requirements of parts 417.2(c)(3) of 9 CFR were not met.
