Violation: 416.2(b)(1), 416.2(b)(2)
Citation: While performing preoperational sanitation inspection at establishment 01015-P on 12-14-2001, the following SPS noncompliances were found. When asking for a ladder to view elevated machinery, the step ladder with hand railing was found with a broken hand railing. This same ladder was identified and verbally mention in a week exit meeting on October 12, 2011. The ladder was at that time tagged by the Quality Assurance department and taken out of use. This same ladder is now back in use and has not had the broken hand rail repaired, except that orange wire ties have been applied to hold the top of the hand rail. In the tray-pack room the new shelving installed for placing skids of nested and palletized product is missing safety stops between the open shelving which would allow skids on the opposite side of the racks to be pushed off. I notified Mr. Sanitation Manager, of these SPS noncompliances and that these SPS noncompliances are in direct violation of 416.2(b) (1) and 416.2(b) (2). In the smoke house RTE area, the face of the smoke house and ceiling junction was found to be heavily rusted/or oxidized and flaking of oxidized metal hanging loose. Also there is exposed insulation and melted plastic coverings on the high pressure steam lime that feeds the steam tunnel for the roto-matic in pack one. I notified Ms. Quality Assurance Technician, of the SPS noncompliances and that these SPS noncompliances are in direct violation of 416.2(b) (1) and 416.2(b) (2).
416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
