Citation: While performing a SPS task at establishment 01015-P, on 3-21-12, the following noncompliance was found at approximately 1115 hrs, in the turkey chilling area: Heavily beaded condensation on a white pipe directly above the east side of the turkey chiller. The heavily beaded condensation was viewed on the approximate entire length of this pipe. I immediately notified Ms. and Mr. of the creation of an insanitary condition and of noncompliance with 9 CFR 416.2(d). I remained in the area until the condensation was removed, no product contamination was observed. After review of the past corrective action(s) concerning condensation, the plant's further planned corrective action(s) were to place a "pipe wiper" for monitoring and removal of condensation in the first processing area until further notice, but no employee or designee was seen in the area at that time. After review of the SSOP form for the turkey salt area, an employee recorded that the turkey salt area was found unacceptable at 11:11 am. When the employee, was asked about the unacceptable area, he state that there was beaded condensation along the wall by the turkey soaker. There was no mention of condensation on the pipes above the turkey chiller, no actions had been taken to eliminate the insanitary condition, nor was there any documentation of the corrective action(s) recorded on the SSOP form.
416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
