Citation: At approximately 0440 hours, 03/26/2012, Dr. and I were doing a routine operational sanitation procedure in the Evisceration area and observed the following in the turkey chiller. There was a white to yellow waxy residue on the blades of the turkey chiller. Upon further investigation residue was found on the walls and at the exit end, including the unloader of the chiller. The residue felt very greasy and when scraped with a fingernail, it left yellowish, clumpy, grease like residue under the nail. Furthermore, there was grease like residue on the lights above the exit end of the chiller. When the lights were touched, yellow chunks of material fell in my hand. Regulatory control action was taken and the turkey chiller was tagged with US rejected tag # B37853290. (Assistant Plant Manager) was notified and shown the findings. Mr. (Plant Manager) and Mr. (Sanitation Supervisor) were also shown the findings. Review of the establishment's pre-operational records showed that the turkey chiller was not checked by QA this morning. Further review of records dating back to 3/20/2012 found no QA check of the turkey chiller during pre-operational sanitation. The establishment is in non-compliance with 416.4(a) and 416.4(b). This noncompliance is being linked to NR #ARE2808033722N-1, dated 3/22/2012, no written response was provided to address this NR.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
