Organic Whole Yellow Corn Grits
It is Fall and mornings are cooler. Here is a good
seasonal breakfast idea.
If you have anything "Southern" in your background or
travels, you have eaten grits for breakfast. These meals
usually consist of white, degerminated, processed grits.
Here’s a new more healthful twist. Try organic whole
yellow corn grits instead and you’re in for a treat. These
grits come in several textures; I prefer the medium grain.
To prepare, boil some water, add a bit of sea salt. When
the water is boiling strongly, stir in some grits — slowly,
stirring all the while. For those of you who prefer to
measure ingredients, use one cup of water and 1/3 cup
grits for each serving. If the grits are too thin, simply add
more grits. If they are too thick, add more water.
Cook and stir for about five minutes. For a special treat,
add some chopped walnuts the last two minutes. That’s
it, eat and enjoy.
Taking this little bit of extra time will start the day
better than some "bar" made in some factory in
who-knows-where town or country, produced by who-knows-whom.
