Tofu No-Egg Salad
This does not taste like egg salad, yet it offers the
same satisfaction as egg salad. The flavor and texture are good. What it
does not have is any cholesterol or saturated fat. And no animals are
harmed or slaughtered to provide any of the ingredients.
What You Need I pound of firm tofu
1/2 cup each finely diced red onion, carrot and celery
1/2 tsp. turmeric
1/2 tsp. HerbamareŽ seasoning
1/2 tsp. dry mustard
3 TBS. VegenaiseŽ grapeseed oil mayonnaise
2 TBS. sweet pickle relish(preferably organic)
How To Fix It
Open and drain the tofu and rinse it off. Steam it for 15
minutes. Then put on a plate and press something heavy on it to get out
excess water. You can also wrap it in a paper towel and squeeze out some
water too. Place the celery, red onion and carrot in the food processor
and pulse, until finely chopped, but not mushy. Place in a bowl , then
add the tofu, turmeric, mayonnaise and seasoning and process until very
smooth. The turmeric gives it the "right" color and adds to the
flavor. The chunky texture of the vegetables and the smooth texture of
the tofu combine especially well, that is the reason for the two step
process. Chill and enjoy. Makes a good appetizer or sandwich on whole
grain bread or crackers. If serving to guests, place in a bowl using
olives, celery leaves, shredded carrots, cherry tomatoes or some other
kind of vegetable garnish. You can sprinkle a bit of paprika on top
also.
A Few Words About the Ingredients
Use regular not silken style tofu, if you can find tofu
made by a local company, buy it.
The VegenaiseŽ can be found in a health food store. I
much prefer the grapeseed to the one they make with canola oil. There is
a no fat eggless mayo, but it does not taste as good.
HerbamareŽ is a mixture of sea salt and herbs, also can
be found in health food stores and is good for seasoning many things.
After making this, taste it and add more seasoning if you wish. I find a small food processor very handy for many things. Often the thought of taking out the big one with all it's attachments seems daunting, but a small one is just right for this recipe and for hummus and many other quick dishes. Sometime it is best to let people taste this before
telling what is in it. Why? Some people who think they don't like tofu
do like this.
