Some people justify eating animals by the mistaken supposition that animals [particularly chickens or turkeys] are dumb and unfeeling.  The question of animal intelligence and emotion was recently the subject of a Psychology Today article entitled Empathic Chickens and Cooperative Elephants: Emotional Intelligence Expands Its Range Again. The current article also mentions that a few years ago a research team found that even mice display empathy, and also explores how empathic chickens are too.
