Pumpkin Spice Bread

pumpkin bread1 3/4 cups all purpose flour

1 cup granulated sugar

1 tsp baking soda

1 tsp cinnamon

1/4 tsp each of nutmeg, allspice, ground cloves, and ginger

1/8 tsp salt

1 cup pumpkin puree

1/2 cup margarine, melted

3 tsp Ener-G Egg Replacer mixed with 2 TBSP water (equivalent of 2 eggs)

1/3 cup soymilk

1 cup vegan chocolate chips or raisins (optional)

Preheat oven to 350 degrees.  Grease 2 medium loaf pans, or 4 mini loaf pans.  Combine dry ingredients in a bowl.  In another bowl combine all the wet ingredients.  Slowly mix the dry ingredients into the wet ingredients until completely mixed and smooth.  If the batter is too thick, you may want to use a 1 or 2 more tablespoons of water to thin it out.  Stir in the chocolate chips or raisins in using.  Pour into pans and bake for 45-50 minutes.   Enjoy!
