1 cup creamy

peanut butter
3/4 cup powdered sugar
1 cup toasted rice cereal
1 cup semi-sweet vegan chocolate chips
1 Tablespoon vegetable shortening (such as Earth Balance)
In a medium bowl mix the peanut butter, powdered sugar, and rice cereal until well combined. Use your hands to form balls from the mixture and set on a plate or baking sheet covered in waxed paper. In a microwave safe bowl place the chocolate chips and shortening. Melt on medium-high for 1 minute and stir. Continue to microwave for 10 second intervals until completely smooth. Let cool slightly. Use a fork to dip the peanut butter balls into the chocolate and let the excess chocolate drip off. Place back on waxed paper. When all the peanut butter balls are covered place in the refrigerator for the chocolate to set. Store in the refrigerator and enjoy!
Tip: If you have extra chocolate try dipping some pretzels in it and placing in the refrigerator to set! Yum!
