Ingredients

Peruano Bean Soup
1 lb. Peruano Beans
One Onion, medium size
1/2 to 1 cup Corn, frozen
1 tsp. Garlic Powder
1/4 tsp. Hot Pepper Flakes
One Carrot
1 Celery, stalk

Preparation

Peruano Bean Soup is a delicious and creamy vegan recipe that we make in our pressure cooker. This recipe makes about 8 single servings and takes about 15 minutes to prepare and 2-3 hours to cook and develop a creamy consistency.

We begin by placing the washed and cleaned beans in the container of our pressure cooker, and add 5 to 6 cups of cold water.

We then add the washed, cleaned, and diced onion, carrot, and celery, followed by frozen corn, garlic and hot pepper.

After this we place the container pot back into the pressure cooker, secure the lid and check the pressure settings. Then we push the automatic bean setting, and go on and do something else.

We also allow the pressure cooker to cook naturally on the warm setting for an additional 1 to 2 hours to allow the peruano bean soup to develope a creaminess.
