The opening sentence in the preface to The 4 Ingredient Vegan sets the stage for the reason for using and enjoying the quick and mostly easily prepared recipes in the book: "People avoid eating foods that come from animals for a variety of reasons, including environmental concerns, reverence for life, and health." This statement also explained our own journey, for we became vegans for reasons of compassion, then for the health benefits which we discovered only three weeks after becoming vegan, and then because it was the best way to live in our world.
The other major intriguing and enjoyable aspect of The 4 Ingredient Vegan is that almost all of the recipes have only 4 ingredients (water, salt, and pepper not being counted) that are easily available from supermarkets, coops, and health food stores. And even though they use a lot of canned and other prepared ingredients to make the preparation easier, all of the recipes are far healthier than any non-vegan recipes. If people wish to lower the oil and salt content it can be easily accomplished.
The 4 Ingredient Vegan has sections on what you need to get started, morning meals, beverages, soups, salads, dips, spreads, sauces, main dishes, desserts and treats, and all with nutritional information. The book is also filled with many recipes that we had never tried before, even though we are constantly experimenting and have many hundreds of our own recipes.
We recommend The 4 Ingredient Vegan for anyone who doesn't have a lot of time to prepare meals. It is also a great cookbook to have in your library for those "what should we eat" times. Enjoy!
