Tofu Terra Cotta

Ingredients
Two 12.3 oz. cartons of Extra Firm
Silken Tofu, cut into 1/2 inch thick steaks
1 cup tomato salsa
1 cup tomato juice
1/4 cup chopped fresh cilantro
1/2 cup yellow tortilla chips,
crushed
1/2 cup blue corn chips, crushed
1 teaspoon paprika
1/2 red bell pepper, very thinly
sliced
1/2 green bell pepper, very thinly
sliced
1 small tomato, very thinly sliced
1/2 red onion, very thinly sliced
Directions
Mix salsa, tomato juice and
cilantro together. Pour a small amount on the bottom an ovenproof 9
inch square pan.
Arrange tofu slices over sauce;
pour remainder of sauce over surface.
Arrange thinly sliced vegetables
over the tofu. Scatter crushed tortilla chips over top; sprinkle
with paprika. Bake for 30 minutes until crust is crispy and tofu is
heated through.
