Southwest Chickpea Cakes

Makes approximately 12 cakes
Ingredients:
Olive Oil for sautéing
1/4 cup diced onion
1/4 cup diced red pepper
1 celery stalk, diced
1 – 280 oz. can chickpeas, rinsed and drained
1 tsp. thyme
1 tsp. paprika
Pinch of cayenne pepper
1 tsp. hot sauce
2 tbsp. chopped fresh parsley
2 tbsp. flour
1 tbsp. cornstarch
Salt and pepper to taste
Preparation:
1. With a little olive oil, sauté onion, green pepper, and celery
for about 5 mins, until translucent.
2. Use a fork or food processor to mash chickpeas, but not too
much. Mix in cooked onion, celery and pepper mixture, spices, flour
and cornstarch. Refrigerate for at least 30 minutes.
3. Shape chickpea mixture into patties and grill with minimal oil
until browned.
