We agree about the disease problem, and your conclusion, but were not sure in the way we believe you are.
Think about the time in the wilderness when the people grumbled about the manna (which was vegan) and wanted flesh to eat. God gave the quail, and after eating it many died. We believe it's very clear that God does not want humans to eat flesh.
Also, most of the food borne diseases come from feces contamination, either in the slaughterhouse, or from fresh manure that is used for fertilizer. Vegetables can also be contaminated with animal flesh and secretions at the time of preparation.
