Dear Kelly:

Thank you very much for writing and for your encouraging comments.

From what we've learned, the temperature where molecules are destroyed is above 400 degrees F.; though some enzymes are destroyed at lower temperatures, but they are also destroyed in the digestive process. Additionally, certain vegetables don't release all of their nutritional values unless they are cooked, but cooking does reduce some vitamin content, such as vitamin C. Therefore, we believe that we should eat a combination of both raw and cooked vegetables. Additionally, most grains need to be cooked in order to be properly digested. Most of the traditional fruits, we eat raw.

Do you have a high speed blender such as a Vita-Mix for making veggie and fruit smoothies? They're a great way to increase your nutritional intake.
