2 weeks ago I wanted to make a casserole, but leftover sauerkraut we had from tempeh rubens needed to be used. Off to the internet I went to search for a recipe that fit my ingredients.
I found Potato Sauerkraut Casserole with Un-Cheese Bean Sauce and thought Lemon Juice, Sauerkraut, Hot Sauce??? this can't be good. I had everything but the beans, so I gave it a try. I substituted a can of refried beans we had around instead of white beans. I used elbow grease instead of a blender (since the beans were already smashed). I baked it in the oven for 1/2 hour at 350 F.
IT WAS FANTASTIC!!Tomorrow I'm trying it w/ the white beans for a potluck.
Thanks for one of the best casserole recipes I've had the pleasure to cook.
