Dear Howard:

Thank you for your visit and interest.

Spelt is an old form of wheat, which is mentioned in the Bible some 2500 years ago. It does not have all of the allergenic problem that our more modern hybrid wheats have. We buy the grain from either a health food store of from our coop, and grind it in our Vita-Mix (see the description in our recipe section). You can also use whole wheat flour as a substitute.
