Hi Frank,
The banana cornbread turned out well. It's not overly sweet and has a whiter appearance than maybe expected as the maize meal I used is made from white maize.
I didn't have to oil the ceramic bowl in which I baked the bread - in a microwave oven for 10 minutes. I was able to remove the bread cleanly from the bowl without any of it sticking.
You will see a picture attached of the final product.
I will be making this recipe up again - easy peasy we say here!
