Thank you for writing.
There really isn't a specific Book of the Bible that spells this out. In Genesis 1:29-30 we are told that God gave us plant foods to be our only diet. When the Israelites were in the wilderness, God against gave them a vegan diet of manna and as long as they ate it, they were healthy and prospered. Daniel ate a vegetarian diet and also prospered, as did his friends.
The answers you are looking for are more medical and common sense than they are Biblical. We know that this is probably not exactly what you wanted, but we hope it helps.
