The September, 2015 issue of the journal Stroke does not contain good news for hard-boiled egg lovers.

"Elevated Total Homocysteine Levels in Acute Ischemic Stroke Are Associated With Long-Term Mortality"

Scientists from the Key Laboratory of Cerebrovascular and Neurodegenerative Diseases in Tianjin, China investigated:

Total homocysteine (*H*) levels are associated with secondary vascular events and mortality after stroke. The aim of this study was to investigate whether *H* levels in the acute phase of a stroke contribute to the recurrence of cerebro-cardiovascular events and mortality.

Scientists followed 3,799 patients for four years after their first stroke.

Researchers found:

"Patients in the highest *H* quartile had a 1.61-fold increased risk of death compared with patients in the lowest quartile…The risk of stroke-related mortality was 2.27-fold higher for patients in the third *H* quartile and 2.15-fold more likely for patients in the fourth quartile than for patients in the lowest *H* quartile."

Neurologists concluded:

"Our findings suggest that elevated *H* levels in the acute phase of an ischemic stroke can predict mortality."

The center atom of *H* amino acids methionine and cysteine is sulfur. A 100-gram portion of apples contains 0.001 gms of sulfur-based methionine. A 100-gram portion of hard boiled eggs contains 0.392 grams of methionine.

Methionone and cycteine are converted in the liver to produce homocysteine which Dr. William Castelli (lead researcher of America's longest ongoing cardiovascular study, the Framingham Heart Study) identifies as the key factor in the etiology of strokes and heart attacks.

When the subject is strokes, The worst foods to eat (the highest levels of sulfur) are chicken and eggs. One must neutralize the resulting acid created in the blood.

To do so, calcium is leached from where it is stored: in the skeletal system. For this reason, those living in meat-eating nations also experience the highest rates of cancer and bone disease.

The medical literature tells us that the most effective ways to reduce tthe risk of heart disease, cancer, stroke, diabetes, Alzheimer's, and many more problems are through healthy diet and exercise.
