Apple banana orange pineapple romaine fruit salad is a delightful raw cold vegan recipe that take about 15 to 20 minutes to prepare and makes two to four servings that are great for a summertime lunch or any other time of day.
Wash the apples, bananas, oranges, pineapple, and romaine lettuce.
Cut the apples into quarters and remove the stem and seed core. Cut the apple quarters into slices and then cut each slice into bite sized pieces. Add the pieces to a mixing/serving bowl, or a covered container if storing in the refrigerator.
Peel the bananas and slice into the bowl. Peel the oranges, separate the oranges into sections, and cut the sections into bite sized pieces and place in the mixing bowl.
Cut off the leaf and stem ends of the pineapple, and cut the pineapple in half from top to bottom. If the pineapple is a large one, you can store half in the refrigerator in a covered container, for a couple of days. Cut the pineapple into 3/4 inch wedges from the center to the outside rind. Cut off the rind with a knife, and cut the pineapple into bite sized pieces and add to the mixing bowl. Mix well, cover, and store in the refrigerator until ready to eat.
Place some of the green romaine leaves on the outer sides of the salad plates or bowls so that they extend slightly over the edge. Stread an additional thin layer of bite size romaine lettuce pieces on top. Mix the fruit and place as much as you like on top of the romaine lettuce.
