1/4 cup Corn Flour
1/4 cup Oat Flour or Quick Oats
1 tsp. Baking Powder

This recipe is a quick and easy way to make a single flat bread, with a delightful corn flavor, that will make a large half moon shaped sandwich, or a southwestern style pizza, or just to eat with a meal. It takes less than 10 minutes to prepare, can be baked in a microwave oven in 5 to 6 minutes, or in a conventional oven at 350 degrees F. with a longer baking time. To make more that one flat bread, just increase the recipe proportionally.

Place all the ingredients in a dry mixing bowl and thoroughly mix together.

Add water sparingly and mix the dough into a cookie dough consistency (a tablespoon should almost be able to stand up in the dough). The total amount of water is usually less than one cup.

If baking in the microwave oven, spoon out the dough onto a large microwaveable plate and smooth out to the edge of the depression or about 1 inch from the edge. Place in the oven on "high" for about 3 minutes, or until the center of the bread is no longer moist. A spatula should be able to be eased under the bread to loosen it from the plate and flip the bread over like a large pancake.

Bake the other side for a minute or two until the flip side is firm to the touch (similar to a pancake).

If baking in a preheated conventional oven at 350 degrees F., spoon out the dough onto a no stick or floured baking sheet, and bake until the top of the flat bread is baked. The bread does not need to be turned if baking in a conventional oven.
