This delicious, whole grain orange carob chip bread recipe will make two loaves of bread as shown. The orange carob chip bread slices are great for a snack, or toasted for breakfast.
Place the flour in a mixing bowl and hollow out the center of the flour for the other ingredients. Add the molasses, soya lecithin, ginger, vitamin C, cinnamon, and peanut butter.
Empty the contents of the orange juice container into a 2 cup measuring cup, and warm to room temperature. Mix some water into the orange juice to bring the contents of the measuring cup to 2 cups. Add the orange/water mixture to the other ingredients in the mixing bowl, and start the mixer. Use a little additional water to wash out the measuring cup, and add to the bread dough. Add the yeast and knead the dough for about 20 minutes, adding additional water as needed to maintain dough consistency.
Just prior to the end of the mixing period, add the carob chips, and make sure they are mixed in uniformly.
Place about a cup of sunflower seeds on a clean counter top. Remove the dough from the mixing bowl, form into a ball, and roll in the sunflower seeds to uniformly coat the dough and then form into a log about 12 to 14 inches long. Cut into two pieces and coat the cut ends with sunflower seeds.
Place the dough in 2 baking pans and place in the warming drawer of the oven or other warm place to allow the dough to rise. We have found that this dough takes a little longer to rise.
When the dough in the baking pans has risen, place the pans into a preheated oven at 350 degrees F. and bake until the outer surface of the bread just begins to get crispy (about 45 minutes).
After the bread has baked, remove the pans and cool on a wire rack.
