Curried Cabbage Kale Carrots Onions and Chick Peas
Serves 6-8

Ingredients

1 lb. Cabbage
1 lb. Kale
1 lb. Carrots
1 lb. Onions
1 lb. can Crushed Tomatoes
1 lb. can Whole Tomatoes, or Fresh Tomatoes
2 cups, Chick Peas, cooked or canned. drained
1 cup Raisins
1/2 cup Walnuts
1 tbsp. Garlic, crushed
1 tbsp. Cumin, ground
1 tbsp. Paprika
1 tbsp. Turmeric
1-1/2 tsp. Cinnamon, ground
1/8 tsp. Cayenne Pepper, or to taste
3 cups Brown Basmati Rice cooked in 6 cups Water

Preparation

This recipe can be prepared in a microwave oven, in a large slow cooker (Crock Pot), in a wok, or in a stew pot on the stove top.  If cooking in a slow cooker, or a wok, or a stew pot, add a cup of water in the beginning to aid in the cooking process and to help prevent sticking.

We start cooking the rice in a pot on the stove top about 45 minutes before the meal time.

If cooking in a slow cooker. wok, or in a stew pot, preheat with a cup of water.

Begin by washing and cleaning the cabbage and kale, cut into small pieces or shred in a food processor.  Add to the cooking pot or large covered microwaveable dish to help wilt the cabbage and kale to make room for the other ingredients.

While the cabbage and kale are cooking, peel and wash the carrots, garlic and onions.  Dice or shred the onions and carrots in the food processor, and crush the garlic, and add the cooking container.

Add all the other ingredients except the whole tomato  which are cut into bite sized pieces and added after the other veggies are tender.

Cook the curried veggies until they are tender.  Add the cut whole tomatoes and simmer for about another 15 minutes.

Serve over a bed of the brown basmati rice, and enjoy!
