Ingredients

Carob Chia Pudding
1-1/3 cups Soy Milk
1/3 cup Chia Seeds
1/2 cup Carob, powder
3-4 Dates, pitted
1/2 tsp. Vanilla Extract, pure

Preparation

Carob chia pudding is a delicious vegan recipe that requires no cooking, and takes only 10 to 15 minutes to prepare. One batch makes about four 4-ounce servings which are great for a dessert or for a snack. It is best to make this recipe the day before you wish to serve the pudding. If you wish to make more, just double or triple the batch.

Place the soy milk, chia seeds, carob powder, pitted dates, and vanilla extract in the container of a high speed blender, cover the container, and run the blender at high speed until all the ingredients are creamy smooth. The ingredients will begin to become thick.

Pour or spoon out the contants of the blender container into a storage container or into individual serving containers, cups, or bowls, and place them in the refrigerator for several hours.
