Swiss chard, kale and brown rice (Greek style) is a delightful way to prepare a vegan meal and take advantage of some of the fresh greens that become available in late spring. We prepare this recipe in our wok, because a wok makes it easier to cook the large volume of greens. This recipe makes enough to serve 6 to 8 adults, and leftovers can be stored in a covered container in the refrigerator for several days. We just warm the leftover servings in our microwave oven, and they are as good or better than when we first cooked them.
Place the rice pot with water on the stovetop and bring to a boil.
While the rice water is heating, clean and peel the onions and carrots, and dice the onions and thinly slice the carrots into the wok. Add the dried herbs and optional hot pepper, and stir-fry with a little water until the onions just begin to become translucent. Turn off the heat.
When the water in the rice pot begins to boil, add the rice, cover, reduce the heat to simmer, and cook until all the water is absorbed into the rice.
While the rice is cooking, wash, clean, and coarsely dice the chard and kale and place in the wok. Stir-fry until the greens become tender, and then thoroughly mix in the cooked rice.
