"We are dedicated to cruelty-free living through a vegetarian - vegan lifestyle. Let no animal suffer or die that we may live!"
We prepare this vegan chard (Swiss chard) and potatoes recipe in either a large covered ceramic baking dish in our microwave oven or in a wok. Leftovers can be stored in the covered baking dish or other covered container in the refrigerator for a few days.
Wash and clean the chard and potatoes, and remove the eyes and bad spots from the potatoes (the skins may be left on), and peel the onions.
Coarsely shred the chard, potatoes, and onions in a food processor or hand shredder, or cut into pieces with a knife, and place in the covered dish or wok. Add the hot pepper and mix well.
If cooking in the microwave oven, cover the baking dish and cook on high heat until the veggies are tender (mixing every 10 minutes).
If cooking in a wok, stir-fry in a little water until the veggies are tender.
Serve and enjoy!
The above recipe is in keeping with God's creation intent (Genesis 1:29-31): 'Then God said, "I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food. And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground-- everything that has the breath of life in it-- I give every green plant for food." And it was so. God saw all that he had made, and it was very good.' (NIV) Let no animal suffer or die that we may live!
