Ingredients

Chard Beets Carrots and Rice
2 bunches Chard (Swiss Chard)
1 bunch Beets with Greens, fresh and crisp
1-1/2 lbs. Onions, large
1 lb. Carrots
Cayenne Pepper or Hot Sauce, to taste
2 cups Brown Rice (cooked in 4 cups water)

Preparation

Chard beets carrots and rice is a relatively simple vegan recipe that is best to prepare in a wok because of the large volume of greens, but it can also be cooked in a large baking dish in the microwave oven or in a large pot on the stovetop. This chard beet carrot and rice recipe will serve 6 adults as a main meal. Leftovers can be stored in a covered dish or container in the refrigerator for a few days and warmed in the microwave oven as desired.

We usually begin by placing the rice water in a covered pot on the stove top, and allowing it to come to a boil while washing and preparing the other ingredients.  When the rice water comes to a boil, add the rice, cover the pot, and reduce the heat to low and simmer until all the water has been absorbed. Then turn off the heat.

Wash and peel the onions and carrots.  Dice the onions and thinly slice the carrots, and add to to the wok or a large covered microwaveable dish.  Add the hot pepper to taste and mix. If cooking in a wok, stir-fry in a little water, if needed, to prevent sticking.  Cook until the onions become semi-translucent.

While the onions and carrots are cooking, begin the preparation of the chard and beets.  Thoroughly wash the beets and greens, and remove any bad spots.  It is usually easier to cut the leaves off of the beet root.  When clean, dice or chop the leaves by hand or in a food processor, and cut the beet roots into small bite sized cubes.  Add the beets and greens to the cooked onions and carrots, and cook until tender.

Add the cooked rice and mix all the ingredients together.  If the rice is still hot, the chard beets carrots and rice are ready to serve and enjoy.  If the rice has cooled, the combined ingredients can be heated for a few more minutes.
