Chayote Squash Baked with Oregano and Lemon Sauce

Ingredients

2 Chayote Squash
2 tsp. Oregano, dried leaves
2 tbsp. Lemon Juice
1/2 to 1 tsp. Cornstarch

Preparation

This recipe can be prepared in either a conventional or microwave oven.  It takes about 10 minutes to bake a single chayote squash in the microwave, and 30-40 minutes to bake them in a conventional oven to insure that the skin is tender.

Wash the chayote squash and cut in half lengthwise along the narrow side.  The seed is quite flavorful so we always leave it in the center of the squash as a tasty treat. 

Place the chayote squash halves in a covered baking dish with the cup side up.  Put about 1/2 tbsp. of lemon juice on each half, and sprinkle on about 1/2 tsp. of oregano.  Cover and bake in the microwave oven on "high" for 15-20 minutes or until the skin of the chayote squash is tender.

Put the cornstarch in a measuring cup and disperse with a about one tsp. each of cold water and lemon juice.

When the chayote squash is baked, remove the squash from the baking dish and pour the liquid into the measuring cup.  Mix, and heat in the microwave oven until the sauce thickens. (1 tsp. of cornstarch will thicken about 1/3 cup of liquid)  If there is less than 1/3 cup of liquid, you may want to use less cornstarch, or add a little more water and lemon juice.  When the sauce is thickened, pour or spoon over the chayote squash halves.
