Chayote Squash and Potatoes

Ingredients

1 lb. Onions
4-6 Garlic, cloves
2-3 lbs. Chayote Squash (4 squash)
3 lbs. Potatoes
2 - 28-oz. cans Tomatoes, crushed with basil
2 tbsp. Oregano, dried leaves
1/4 tsp. Fennel Seeds (optional)
Hot Sauce, to taste

Preparation

This recipe can be prepared in either a conventional oven at 350 degrees F., or in a microwave oven, on high, for faster preparation.

Wash, peel and dice the onions, and place in a large covered baking dish.  Peel, wash and crush the garlic, and add to the baking dish.  Add the oregano, fennel seed, and hot sauce.  Mix well, cover, and cook until the onions begin to become semi transparent (about 5 minutes in the microwave oven).

While the onions are cooking, thoroughly wash the chayote squash.  Cut each chayote squash lengthwise in half, and cut each half into bite sized pieces.  Add to the covered baking dish when the onions are cooked.

Wash and peel the potatoes, and cut into bite sized pieces.  Add to the covered baking dish and mix well.

Place the covered baking dish back into the oven and cook until the potatoes and chayote squash are tender.  Mix occasionally to make sure that the potatoes and chayote squash are uniformly cooking.

When the potatoes and squash begin to become tender, particularly the chayote squash skin), add the crushed tomatoes, mix well, and continue cooking for another 20 minutes to blend all the flavors, or a little longer if the chayote squash and potatoes need more cooking.

When the chayote squash and potatoes are finished cooking, remove from the oven, serve and enjoy with a large tossed salad.
