Carob Fudge Cake
Ingredients
Cake
1-1/2 cups Spelt or Whole Wheat Flour
1/2 cup Rolled Oats, ground
1/2 cup Carob, powder
1 tsp. Baking Soda
12 Dates, pitted
4 Bananas
Apple Juice, as required
1 tsp. Vanilla Extract, pure
Icing
1/2 cup Water
3/4 cup Dates, pitted
1/2 cup Carob, powder
1 tsp. Vanilla Extract, pure
1/2 cup Peanut Butter, natural

Preparation
From start to finish, this cake can be made in 30 minutes by baking in a microwave oven, which is the method described in this recipe. Even in a conventional oven, this carob fudge cake can be made in less than 1 hour; the only difference being the baking time at 350 degrees F.
We grind our own flour in our Vita-Mix, but store bought flour can also be used.
Place the flour and ground oats in a mixing bowl, add the carob powder and the baking soda and mix well.
Peel the bananas and place in the contain of a high speed blender. Add the pitted dated, checking carefully to make sure there are no pits, cover and run at high speed until creamy smooth. Uncover, and add the banana date mixture to the dry ingredients in the mixing bowl.
Add the vanilla extract and mix the cake batter thoroughly to insure that all the ingredients are blended together. If the cake batter is too stiff, add a little apple juice, but be careful not to let the batter get runny.
For baking this cake, we used our silicone rubber pie pan, which we set on a microwaveable plate for support. If using other types of baking pans, or a new non-stick pan, we suggest that it be lightly oiled before pouring in the cake batter. Pour in the batter and smooth uniformly to the edges.
Bake the cake until the cake begins to separate from the edge of the pan. This took only nine minutes in our microwave oven set on high at 1000 watts.
In the same time the cake is baking, we prepared the icing in the same blender container that we made the banana mix. Add the icing ingredients, cover, and run at high speed, using the tamper as necessary to unsure that icing is creamy smooth.
Remove the cake from the oven.
Place another plate over the cake that is slightly larger than the cake. Without squeezing the top and bottom plates together, carefully turn the cake upside down onto the new place. Remove the former bottom plate and carefully lift off the pie pan.
Scoop the icing out of the blender container and place on top of the cake and gently smooth over the surface and edges of the cake with a table knife.
Serve and Enjoy!
