Orange Ginger Coconut Raisin Frozen Pudding Dessert
A dairy-free ice cream substitute
Ingredients
1-1/2 cups Water
1 cup Raisins
5-6 Bananas, peeled
12-oz Orange Juice, frozen concentrate
1 tsp. Guar Gum, powdered
1 tbsp. Ginger, powdered
1/8 tsp. Cayenne Pepper, powder (optional)
1 cup Coconut, shredded, unsweetened

Preparation
Place all the ingredients, except the coconut, into the container of a High Powered Blender (Vita-Mix type) in the order listed above. Install the cover and insert the "tamper/mixing stick" (make sure it's the one supplied by the manufacturer, and that it cannot reach the blades). Start the blender at slow speed and quickly increase to the highest speed, in stages. Assist the mixing as necessary with the "tamper/mixing stick". Remove the "stick" and allow the mixer to suck air into the vortex. When the mixture has become very thick, stop the mixer.
Add the shredded coconut, start the mixer on slow to medium and work the coconut into the mixture with the aid of the "tamper/mixer stick". When the coconut is uniformly distributed, stop the mixer. Pour into 4-oz. plastic cups with lids (Dixie type), or into "ice-cream-on-a-stick" molds. Place in freezer.
When solid, your treat is ready to enjoy.
For a special treat, try mixing two different flavors of frozen desserts together. Pictured to the left is the peanut butter - carob (left), the orange ginger coconut (right), and the combination (center).
To make this particular combination, fill the cup 1/2 full with the orange ginger coconut raisin frozen dessert and slowly pour the peanut butter carob into the center until the cup is filled.
